Fun Ways to Eat Mangoes!

Have you ever eaten mangos? They are those light orange/yellow tropical fruits that are oh-so-tasty in Greek yogurt, as a salsa, or in a smoothie! If you like to be adventurous, try these creative ways to eat mangos, and let us know if you like them!

Tropical Mango Pita Pizza – Spread tomato sauce on a whole grain pita, and top with grilled chicken, tomatoes, red onions, mangos, a little Italian blend low-fat cheese, and cilantro. Mango and Roast Beef Sandwich – Toast whole wheat bread and spread low-fat mayo on one side. Add thin mango slices on top of the mayo, then add roast beef and watercress. Top with a little pinch of salt and pepper.

Mango, Avocado, and Cucumber Salsa – Dice 1 mango, 1 avocado, 1 cucumber, ½ jalapeño and ½ small red onion into small pieces. Toss together in a bowl and add lime juice. Eat with homemade, whole grain pita chips at your next pool party for a refreshing treat!

Mango Coleslaw – For your next barbeque, make coleslaw with a tropical fruit twist! Buy pre-packaged coleslaw mix and combine with diced mango and low-fat mango flavored Greek yogurt instead of mayonnaise.
