Eat More Soup!

Cruciferous vegetables and dried beans and peas, the January Foods of the Month, are perfect ingredients for homemade soup! Not only is soup a satisfying meal for cold weather, it is also a great way to get your vitamins and minerals. Check out our ideas for tasty soups – all of them contain the January FoMs!
Creamy Broccoli Soup – In a large pot, cook 1 chopped onion in extra virgin olive oil until it begins to soften, about 5 minutes. Add 2 cups low sodium vegetable broth, 1 bunch broccoli florets, 1 cup russet potato pieces, 2 cups water, and salt and pepper to taste. Simmer until veggies are tender (about 20 minutes). Blend all ingredients together and top with reduced-fat cheddar cheese.

White Bean, Chicken and Spinach Soup – Grill chicken, shred, and set aside. Cook sliced garlic in extra virgin olive oil in a large pot, until it begins to brown. Add 6 cups low-sodium chicken broth, 1 can cannellini beans (rinsed), and 2 cups fresh spinach leaves. Add grilled chicken, and simmer for 10 minutes.

Creamy Cauliflower Soup with Garlic – Cook sliced garlic in extra virgin olive oil in a large pot, until it begins to brown. Add 1 small head of chopped cauliflower to the pot along with 5 cups of low-sodium chicken broth, salt, pepper and thyme and simmer until the cauliflower is tender (about 20 minutes).
