Here’s a great salad idea that can be used for a fast lunch or a healthy dinner side.
½ cup sliced almonds
¾ cup dried cherries
2 oz goat cheese, or feta cheese, crumbled
Your favorite low-fat vinaigrette dressing (to taste)
- Put the spinach, almonds, cherries, and cheese in a bowl.
- Pour some vinaigrette dressing on top, and toss/mix gently.
- Serve in salad bowls immediately for an appetizer, side salad, or light lunch.
