Colorful Egg Flowers

Try these kid friendly egg and veggie “flowers” as breakfast or for a snack!


2 eggs
1 large green, yellow, or red pepper (use more if you want different colored flowers)
1 tbsp green onion, chopped
A sprinkle of low-fat shredded cheese (optional)
Salt and pepper, to taste


  1. Wash the pepper, then cut into circular slices the fat way, about ¼ inch thick. Select the slices from the widest part of the pepper to use.
  2. Add pepper slices to a non-stick skillet on medium heat.
  3. Next, carefully crack one egg into each pepper slice. Allow to cook for several minutes. If you like the egg yolk cooked thoroughly too, cover the skillet with a top (this will cook the inside of the eggs very quickly).
  4. Right before eggs are done, sprinkle the cheese, then the green onions on top. Add a little salt and pepper.
