Try these kid friendly egg and veggie “flowers” as breakfast or for a snack!
1 large green, yellow, or red pepper (use more if you want different colored flowers)
1 tbsp green onion, chopped
A sprinkle of low-fat shredded cheese (optional)
Salt and pepper, to taste
- Wash the pepper, then cut into circular slices the fat way, about ¼ inch thick. Select the slices from the widest part of the pepper to use.
- Add pepper slices to a non-stick skillet on medium heat.
- Next, carefully crack one egg into each pepper slice. Allow to cook for several minutes. If you like the egg yolk cooked thoroughly too, cover the skillet with a top (this will cook the inside of the eggs very quickly).
- Right before eggs are done, sprinkle the cheese, then the green onions on top. Add a little salt and pepper.
