Irish Soda Bread is made with baking soda as a leavening agent instead of yeast, hence the name. This version has roughly one gram of fat and four grams of fiber per four-ounce serving, so a light spread of no-sugar added jam makes it the perfect accompaniment to a cup of tea!
Low-fat Irish Soda Bread
1-1/2 cups whole-wheat flour
1-1/2 cups all-purpose flour
1-1/2 tsp baking soda
1 tsp salt
2 tbsp sugar
1-1/2 cups low-fat buttermilk
½ cup raisins
- Preheat oven to 3750.
- Mix first 5 ingredients in a large bowl. Slowly add buttermilk and stir until a soft dough forms. Add raisins.
- Lightly knead the dough on a floured surface for a minute or so. Shape dough into a round and slightly flattened ball.
- Spray a cookie sheet and place dough on it.
- Using a sharp knife, make an X at the top about ½ inch deep.
- Bake for approximately 40 minutes, until golden. (Do the toothpick test to make sure it’s done.)Let it cool for 5-10 minutes before serving.
